ROASTED VEGGIES
Cut veggies into chunks. Use any mix of veggies you like! I used the following:
--1 small head cauliflower
--1 red pepper
--1 yellow pepper
--6 baby yukon gold potatoes
--2 zuchinni
--8 oz button mushrooms
--4-5 green onions
Slurry/Marinade
Puree in blender:
--3-4 sun dried tomatoes (rehydrated in water) I put in small dish and barely covered with water and let them rehydrate then dumped all of it in the blender.
--3-4 fresh basil leaves
--3-4 fresh sage leaves
--sprig (minus stem) rosemary
--3 garlic cloves, finely chopped or grated
--2-3 Tbps low sodium soy sauce
--1/3-1/2 c grapeseed oil
--pinch cayenne pepper
--sea salt to taste (I salted when took out of oven)
You can add any fresh herbs you prefer. The original recipe called for thyme, but I used sage and rosemary instead (because that's what I had on hand).
Toss veggies with Slurry/Marinade.
Spread evenly on baking pan. Bake 35-40 minutes at 425 until veggies begin to brown.

January Photos
A few photos from January.
I cleaned and organized the pantry, including my large assortment of teas I didn't realize we had this much because it was all pushed back into a corner, lol.
Jim made 3 different soups. This was the base for one of them.
We discovered this new pica de gallo recipe that we love and it's great mixed with avocados for guacamole. I'll include the recipe in a later post!
I baked chocolate chip oatmeal cookies. Recipe here!
My nephew spent the weekend with us. He's a great kid.

Heavy Heart

Being Thankful
There are so many things I'm thankful for. . . my husband, my kids, family, friends, food, a roof over our heads, laughter, beautiful Colorado, my camera. . .
On this special day set aside for expressing gratitude, I hope it's a day spent with those you love, doing what you love, creating memories to last a lifetime.
And, hopefully, it's just the first of many days where we express our gratitude.

New Wheels!
Hubby has a new set of wheels!
Ha! I gotcha. You thought it was a new car, didn't you?!?!
His new job is only a couple miles from the house so he decided he would give this whole green and healthy thing a try!
Of course he has a helmet. He was just taking it for a ride up the street - it's called practice. It's been a few years since either of us has ridden a bike!
He rode it to work one day and then it snowed, but he should be able to ride it come Monday.
Isn't he cute?

First Snow!
We received our first real snow overnight. I love snow. Yeah, I'm that girl.
I'd say we got between 3-4 inches of the fluffy white stuff, but a good amount of it was gone by mid afternoon. Just in time to get our second wave tonight!
That's the good thing about Colorado (unless you live in the high country), the snow melts within a day or two! It's the best of both worlds--one with snow and one without!

Fall Adventure | Luna's 1st Mtn Hike | Hiking Eldorado Springs State Park, CO
A couple weeks ago we took Luna, our 2 year old Great Pyrenese/Collie mix hiking in the mountains for the first time.
She loved the hiking! The car ride, not so much. She managed to puke three times, luckily it consisted only of dog food so it didn't smell and it landed on the rubber mat in the back of the truck (thank you WeatherTech!). TMI, I know.
Our intent had been to go up to Rainbow Lakes, but that was more than an hour drive and we quickly realized Luna wasn't going to handle that well. We made one stop at Boulder Canyon so we could clean up mess #1 and give her a small break from the car, then headed to Eldorado Springs State Park. Much closer and better road.
It was a beautiful day and Luna really enjoyed the hike. We'll just have to figure out what to do about her car sickness.
Next time we'll bring Bleu, our standard poodle. Unfortunately, Libby, our golden retriever, lost her eye sight about 6 months ago to glaucoma. She does fine in the house and on our daily walks on the pavement with the other dogs to guide her, but she can no longer go on trails and uneven terrain. We leave one dog home with her while the other gets to go on an adventure.

Fall Adventure | Fall Colors | Hiking Eldora, CO
We started at the Hessie Trailhead. It's not too far from Eldora Ski Resort, which isn't far from Nederland, CO.
My sweetie.
This is what the majority of the trail was like, very rocky. It was a great cardio workout on the way up and strength training on the way down.
The maiden hike for my new shoes. They were awesome! My body ached, but not my feet!

It was a wonderful hike! Four miles round trip and we climbed about 800 feet, starting at 9000 feet and ending at about 9800 feet.
